Paneer in hot garlic sauce – Microwave Recipe


This is a Paneer fusion dish in yummy garlic sauce.  Also a delicious vegetarian dish that can be cooked in minutes in a microwave . Goes well with noodles and fried rice.

Preparation Time: 15 min

Cooking Time: 15 min

Serves : 3 to 4

Ingredients:

1. Paneer / cottage cheese – 200gm  (cut into 1 ” cubes)

2. Capsicum, cut into tiny cubes – 1

3. Oil – 3 -4 tbsp

4. Garlic flakes , chopped finely – 20

5. Dry Red chillies (broken into pieces ) – 2

6. Tomato Ketchup – 4 tbsp

7. Red chilli sauce – 2 tsp

8. Soya Sauce – 2 tsp

9. Pepper – 1/2 tsp

10.Salt – as required

11. Sugar – a pinch

12. Vinegar – 2 tsp

13. Ajinomoto – 1/4 tsp

14. Water- 1 1/2 cups

15. Cornflour – 2tbsp (dissolve this in 1/2 cup water)

Method:

1. Take a microproof dish and add oil, garlic flakes, broken dry red chillies, tomato ketchup, red chill sauce, soya sauce,pepper and ajinomoto. Mix well and microwave for 2 minutes.

2. Add water,salt,sugar and vinegar. Mix well and microwave again for 6 minutes.

3. Add cornflour paste and microwave for 3minutes or more till slightly thick. Mix well.

4. Add paneer cubes and capsicum to the sauce and microwave for another 2 to 3 minutes. Mix well before serving. Serve hot .

Carrot Pepper Rice – Microwave Recipe


A very quick and easy Indo Chinese rice recipe…and above all delicious !

Preparation Time: 5 min

Cooking Time: 15 to 20 min

Serves : 2 to 3

Ingredients:

1. Rice – 1 cup (soaked for 15 – 20 minutes)

2. Oil- 3 tbsp

3. Onion , sliced – 1

4. Capsicum, chopped – 1

5. Carrot, chopped – 1

6. Salt – 1 tsp

7. Freshly crushed pepper – 1/2 tsp

8. Soya sauce – 1/2 tsp

Method:

1. Mix oil, onion, capsicum,carrot in a big microproof dish and microwave for 3 minutes.

2. Add rice, 2cups water,salt,pepper and soya sauce. Microwave covered for 13 minutes.

3. Stir once in between. Sprinkle pepper. Serve after 5 minutes.

Chilli Chicken


Preparation time : 20 min

Cooking time : 30 min

Ingredients:

For preparing the chicken pakoda:

1. Boneless chicken pieces(cut into equal cubes) – 1/2 kg

2.egg white-2

3.Maida – 2tbsp

4.Cornflour – 1 tbsp

5. Soya Sauce – 4tsp

6.Oil – for deep frying

For preparing the sauce:

7.Green Chilli Sauce – 4 tsp

8.Tomato sauce – 5tsp

9.Vinegar – 2tsp

10.Red food color – 15 drops

11.Soya Sauce – 3 tsp

other ingredients:

12.Garlic chopped – 2 tsp

13.Ginger chopped -2tsp

14.Onion sliced thin – 1

15.Capsicum(thin long slices) – half

16.Green chillies – 6

17.Curry leaves- few

18.Ajinomoto – 2 pinches

19.White pepper – 1/2 tsp

20.Sugar – pinch

Method:

Marinate the boneless chicken cubes in ingredients 2 – 5 for 20 to 30minutes. Keep aside.

Meanwhile, mix all the ingredients for preparing the sauce  and keep aside.

Then,take the marinated chicken cubes and deep fry them till light brown on medium heat. Keep the chicken pakoda aside on an absorbent paper.

Then, take another kadai and heat 2 tbsp oil and add sliced onions,slit green chilles,capsicum, curry leaves,chopped garlic and ginger and mix well and saute for some time  for about 5 to 6 minutes.

To this, add the chicken pakoda, ajinomoto,white pepper,sugar and the sauce mixture. Mix  well and allow it to cook for sometime.

Garnish with chopped coriander or spring onions and serve hot.
