Simple Vegetable Biryani

Tried out few varieties of Vegetable Biryani recipes …but I found  Sara’s recipe to be matching my taste. Kudos to Saras for posting such a delicious biryani recipe. 

Preparation Time: 10 min

Cooking Time : 25 to 35 min

Serves: 2 to 3

1. Basmati Rice – 3 cups

2. Water – 5 cups

3. Oinon, sliced – 1 big

4. Carrot, chopped – 1 .

5. Beans , chopped-  6

6. Brocolli – few florets

7. Cauliflower- few florets

8. Paneer cubes – few pieces

9. Green Peas – handfull

10. Spices :

cloves/lavang -2

cinammon/dalchini – 2

bay leaf- 1

cardamom/Elaichi -2

11. Mint leaves / Pudina – handfull

12. Oil – 2 ttblsp

13. Butter/ghee – 1/2  tblsp(Optional, but adding this would give a lovely aroma n taste)

14. Curds – 1 tblsp

15. Rose water – 1/2 tsp

16. Salt – as required

17.Red chilli powder – 1/2 tsp

18. Red colour – a pinch

19.Garam Masala – 1/2 tsp

20. Turmeric – 1/4 tsp

21. Kasoori Methi – 1/2 tsp


Firstly, wash and soak the basmati rice in 5 cups of water.

Meanwhile, cut all the vegetables into small medium pieces and put them in water.

Heat a pressure cooker, add oil / ghee . To this, add the spices ( cloves,cinnamon,bay leaf , cardamom), sliced onion and fry them till golden brown.

Add pudina leaves and sauté them for some time.

Add the chopped vegetables and sauté  them. Add paneer and sauté.

To the sautéed stuff , add red chill powder, turmeric,a pinch of red color gram masala and crushed kasoori methi . Mix well and sauté for few minutes.

Then add the soaked basmati rice . Sauté for some time ,add curd and water to it.

Add salt as required.

Close a lid and keep on medium flame.

This rice will be ready in 15mins. Keep checking in betwween.

If slightly the bottom rice is burnt then the taste is good. Turn off the flame and add rose water.Mix well and serve hot with raita or any curry of your choice.

Jeera Rice / Cumin Flavored Rice

Serves -2

1. Basmati Rice – 1 cup

2. Onion – 1 finely chopped (optional)

3. Butter / ghee – 2 tsp

4. Oil – 1tsp

5. Jeera/Cumin seeds – 1 tbsp

6. Star anise – 1 (optional)

7. Cinnamon -1 inch piece

8. Bay leaf-1

9. Lavang / Cloves -2


Wash and soak basmati rice in water for 20 minutes. Drain and keep it aside.

Heat oil and ghee in a pan . Add star anise, cloves, cinnamon and bay leaf, saute for a few seconds and then add jeera seeds.

When jeera splutters, add onion and saute till onions become golden brown, then add the drained rice and fry for a few minutes. Add 2 cups of water, needed salt and cook rice till done.

Serve hot with any gravy of your choice.

Kobbari Annam / Coconut Rice

Preparation n Cooking Time: 30 min

Serves : 4



1.Raw rice – 2cups

2.Coconut Milk – 4cups

3.Turmeric powder – 1/4tsp

4.Salt to taste

5.Garlic Cloves  sliced- 8 to 9 OR ginger garlic paste – 1tsp

6.Green Chillies – 4 to 5

7.Onions, finely sliced – 2

8. 2 Cinnamon sticks – 1 inch each

9.Cloves – 2

10. Elaichi -2

11.Bay leaf – 2

12.1 tbsp ghee + 1/2 tbsp oil


Heat oil and ghee in a cooking vessel on medium heat. Add Cinnamon Sticks,cloves,elaichi bay leaf and fry for a few seconds. Add sliced garlic cloves / ginger garlic paste and fry for half a minute. Add green chillies and sliced onions. Saute them for 4 to 5 min on medium heat.

Add turmeric powder,salt and mix well . Then add drained rice and fry it along with onions for a minute. Add 4 cups of coconut milk and bring to a boil.

Reduce heat and place lid and cook till rice is done.

Serve with raita or any curry of your choice.

Daddojanam / Tempered Curd Rice

Preparation time :  5 minutes

Cooking time : 15 minutes.

Serves : 2

Being the last friday of  Sravana Maasam, prepared Semiya Payasam and Attisiri,kommu Senagala talimpu  and Daddojanam for Goddess Varalakshmi. Here goes the recipe for daddojanam which is a traditional rice dish from South India.It is very simple and quick to prepare. Pooja at my home is incomplete without this dish and is one of my favourite.


1.Rice  – ½ rice cup

2. Water – enough to cook rice approx lil more than 1 rice cup. (water should be taken twice more than rice)

3.Curd – as required.

4. Tempering:

Whole dry red chilli -1
Senagapappu /chana dal- 2 tsp
Mustard Seeds /aavalu -1 tsp
Curry Leaves /karvapak – few
ginger chopped finely- 1 tsp
Green Chilies ,chopped finely- 3 or more.
Coriander Leaves – few

5.Pomogranate  seeds.- handful.


Wash rice and drain the water and pressure cook till done. Add curd  and salt. Mix well.

Heat  2 tblsp oil in a pan. Add musturd seeds and once they splutter add channa dal,curry leaves,finely chopped ginger and chopped green chillies. Saute well for some time.

Add the tempering mixture to the curd rice kept aside. Add chopped coriander leaves and pomogranate seeds.

Matar Pulao (Green Peas Pulao)

Ingredients :

1. ghee – 3 -4 tbsp

2. Cloves / Lavang – 6

3.Dalchin / Cinnamon stick -1 stick

4. Elaichi / Cardamoms – 3

5. Shahjeera – 1 tsp

6.Ginger Garlic Paste – 1 tsp

7.Onions chopped – 1 big

8. Green Peas – 1/2 cup

9.Basmati Rice- 2 cups

10. Salt to taste

11. Coriander Leaves- chopped for garnishing.


Heat ghee in a pressure cooker, add lavang, dalchin, elaichi, shahjeera and ginger-garlic paste, mix well and saute on a slow flame for few minutes.

Add onions and saute again till the onion turns brown. Now, add green peas and saute for few more minutes. Add the rice, 3 cups of water and salt .Mix well and pressure cook for 3 whistles. Garnich with coriander leaves.

Tomato Rice


1. Basmati Rice – 1 cup
2.Tomatoes chopped- 3 to 4
3.Onion sliced – 1 medium
4.Green chilies slit – 4
5.Red Chilly powder  – 1/2 tsp
6.Turmeric /haldi – less than 1/2 tsp
7.Ginger grated – 1 small piece
8.Garlic crushed – 2 flakes
9.Cloves – 2
10.Cinnamon – 1/2 inch piece
11.Cardamons -2
12.Oil – 2 tbsp


Wash and soak rice for 15 minutes in water. Drain water and keep it aside.

In a frying pan, add cloves, cinnamon, cardamon and saute for a minute.  Add ginger & garlic to it, fry for a minute and add green chilies and onions.  Fry till onion turns light brown. Add chopped tomatoes to it. Then add salt, chilly powder and turmeric to it.

After tomatoes are well cooked for about 5minutes, add rice to it and stir for  2 minutes.

Lastly, add 1 1/2 to 2 cups water and pressure cook the  rice .
