Bread Bajji / Bread Pakora


A cup of masala tea and bread pakora makes a perfect sunday evening with family.
I always loved bread snacks that amma prepared for me n my brother after school hours . As usual, I’ve added some extra ingredients to amma’s recipe checking out from the internet. Here it goes:

Ingredients :

1. Bread – 4 to 5 slices of the regular bread size.
2. Rice flour – 1/4 cup
3. Besan – 1/2 cup
4.Red chilli powder – 1/2 tsp
5. Ginger garlic paste – 1/2 tsp
6.salt to taste
7. Cooking soda – 2 big pinches
8. Oil for frying.

Method:

Trim the edges of the breads and cut them diagonally / vertically as per your preference. Keep this aside.

Take a bowl and add rice flour, besan, red chilli powder ,ginger garlic paste and salt .Mix well and add sufficient water to prepare the batter.then, add cooking soda. The batter consistency should be thicker than the dosa batter you prepare. Kindly check that it should not be too runny else the batter will not stick to the bread properly.

Heat oil. Dip each slice of bread in the batter on both the sides.Then, fry this on medium flame till both sides turn golden. Drain them onto a tissue paper and serve hot with tomato chilli ketchup.

Paneer Capsicum Tomato Sandwich


 Paneer capsicum tomato sandwich is a very simple n easy recipe to prepare. This is a tasty and crispy dish which is a filling snack that the kids are sure to love.

Ingredients:

1. Capsicum, finely chopped – 1/2 cup

2. Tomato, finely chopped – 1/2 cup

3. Paneer, grated or finely chopped – 1 cup

4. Pepper powder – 1/2 tsp

5. Salt – to taste

6. Mozzarella cheese – 1 tbsp

7. Cheese slices – 2

8. Butter – 2 tsp

9. Sandwich bread – 4 slices

Method:

Take a bowl, add chopped paneer, chopped capsicum, chopped tomato, pepper, salt, mozzarella cheese and mix well.

Now, spread this mixture on a bread slice and place a cheese slice on it. Keep another bread slice on top and spread little butter on top. Grill the bread and when once done cut into half and serve hot with any sauce of your choice.

Microwave Popcorn


Cooking Time : 6 to 7 min

Ingredients:
1. Dried Corn – 1/2 cup

2. Butter – 1/2 to 1 tbsp

3. Red Chilli Powder – 1/2 to 1 tsp

4. Salt to taste.

Method:

Mix all the ingredients together in a microwavable dish.

Cover and cook at HI for about 6min.

Baby Corn Pakoda


Hmmm…its raining here and felt like having some pakoda kinda snacks during tea time . A packet of baby corns lying at home gave me an idea of making pakoda with them. Heavy rain , masala chai…baby corn pakoda and some melodious songs….what a relaxing moment !

 

 

Preparation Time : 5 min

Cooking Time : 15 min

Serves – 2 to 3

 

Ingredients :

1. Cornflour – 4 1/2 tbsp

2. Jeera / cumin seeds- 3/4 tsp

3. Garam masala powder – big pinch

4. Turmeric – 3/8 tsp

5. Dhaniya powder / Coriander powder – 3/4  tsp

6. Red chilli powder – 1  1/2  tsp

7. Amchoor powder – 3/8 tsp

8. Salt to taste

9. Oil for frying

10 . A packet of baby corns – 12 in number.

 

Method:

Firstly, wash the baby corns and pat them dry. See that they are dried up very well. Slit them length wise or even smaller.

Then mix all the ingredients from 1 to 8. Mix well and add  3 1/2  tbsp water. See that the paste is not too watery .

Heat oil in a kadai . Dip the baby corn in the paste(see that it gets well coated) and slip it into the kadai and deep fry it. Remove onto an absorbent paper.

Serve hot with sauce.

Low Cal Tandoori Mushrooms


I had a packet of mushrooms lying at home and was wondering which spicy recipe i could prepare . On referring a Low Calorie Cookbook, i found this recipe pretty interesting as i could finish it off in jus 10 min. You can also try this using low fat paneer or baby corn .

Preparation Time: 10 mins.
Cooking Time: 10 mins.
Serves 4.

Ingredients:

1. Mushrooms (cut into half or cut into more smaller parts) – 300g
2. Low fat milk – 1/2 cup
3. Cornflour -1/2tsp
4. Dried fenugreek leaves / kasuri methi – 1/2 tsp
5. Oil – 1/2 tsp
6. Salt to taste
7.  To be ground into a paste :
whole dry kashmiri red chillies
4 large sized cloves of garlic 
25 mm. (1″) piece of ginger 
2 tsp coriander-cumin seeds powder / dhania-jeera powder

 

Method

  1. Wash the mushrooms thoroughly. Drain and keep aside.
  2. Dissolve the cornflour in the milk and keep aside.
  3. Heat the oil in a non-stick pan, add the prepared chilli-garlic paste and kasuri methi and sauté for one minute.
  4. Add the mushrooms, cornflour-milk mixture and salt and sauté for 4 to 5 minutes till the mixture coats the mushrooms.
  5. Serve hot.

Chilli Garlic Paneer

Serves : 4

Preparation Time: 20 min

Ingredients: 


1. 500g – paneer, chopped into small cubes
2. 10 – dried red chillies
3. 6 – garlic, peeled
4. 1/2 tbsp – soy sauce
5. 1 tbsp – tomato sauce
6. 1/2 tbsp – vinegar
7. 1 – onion, fibely chopped
8. Curry leaves
9. Salt to taste

 

Method:

Mix dried red chillies, garlic, soy sauce, tomato sauce, vinegar and grind them into a smooth paste.

In a wok, heat oil, add curry leaves and allow them to splutter.

Add onions and fry until golden brown.

Add the paste and cook until oil starts seperating.

Then, add some water and salt and cook again.

Finally, add paneer cubes and cook until paneer is a soft. Serve hot.

Semolina snack (upma rava snack)


This one snack is very easy to prepare and is posted on my best friend’s version.
Ingredients:
1. Upma Rava – 1 cup
2. Curd
3. 1 medium size onion
4. 4 Green Chillies
5. Soda – 1/4 tbsp
6. Jeera (Cumin Seeds)
7. Salt – as per taste
8. Oil
Method:
Chop onions and chillies into small pieces. Mix these with all the other ingredients and make a thick paste and keep it aside for 1-2 hrs.
Make small sized balls and press them flat and fry in the oil till they turn into brownish colour… Garnish with coriander leaves and serve hot….. :-))

Semiya Upma


Semiya Upma is an easy n fast cooking yummy breakfast dish.This can also be made during tea time or dinner sometimes when you run out of time. Beginners generally opt to cook such easy recipes and here goes one for such !

Preparation Time:  5 to 8 min

Cooking Time : 15 min

Serves – 2

Ingredients:  

1. Semiya / Vermicelli – 1 cup

2. Green chillies – 2 to 3

3. Carrot – 1

4. Matar / peas – little less than handful

5. Onions – 1 Big

6. Elachi, crushed -2

7. Lavang, crushed – 2

8. Dalchin, crushed – 1/2 inch piece.

9. Ginger garlic paste – 1 tsp

10. Salt o taste.

11. Water – 2 cups

12. Kaju /Cashew nuts – 4 to 5 (optional)

Method:  

In little ghee/ butter , fry semiya till light golden brown. keep this aside.

Now, in a separate cooking vessel heat oil and sauté crushed elaichi, lavang,dalchin. To this add ginger garlic paste, onion, carrot, mirchi . Mix and sauté them well . Then add salt and mix well.

Add  2 cups of water and then add the golden colored semiya.

Put on low flame and close the lid for 5 to 6 min and switch off the flame.

Garnish with kaju roasted in little ghee.

Rava Dosa


Preparation Time: 15 minutes
Ingredients:
1. Maida – 1/2 cup
2. Rice flour – 1 cup
3. Bombay Ravva – 1 cups
4. Jeera(Cumin seeds) – 1 tsp
6. Green chilies
7.Salt
8.Water
9.Oil

Method

Mix both the flours and ravva with sufficient water (to get very thin and crispy dosa).
Then add all the other ingredients mentioned (except oil) and prepare the batter as shown.

On hot pan, pour some batter starting from outside and going towards inside, in the form of a circle.Then sprinkle some oil and roast the dosa on both sides till its crispy.

It is a great snack…one of my favourites.
and mmm…..Allam Chutney goes very well with this snack.

Spicy Bread Toast


Ingredients:

1. Potato – 4 medium sized
2. Carrots -1
3. Onions – 6 (2:3 ratio to be followed with respect to potatoes)
4. Seasoning:
Jeera (Cumin Seeds) – 1 tsp
Minapappu(Urad dal) – 1 1/2 tsp
Aavalu(Mustard seeds) – 1tsp
Karvepaku (Curry leaves)- few leaves
Dry red chilli – 1
Ginger – 1/2 inch chopped
5. Green Chillies -4
6. Red Chilli powder – 1 tsp
7. Salt – 1 1/2 tsp salt
8. Bread slices
9. Butter / ghee
Method:
Mash the potatoes and carrots together. Heat pan and fry the seasoning in oil. Dont fry too much. Add onions and green chillies to this. Then, add the mashed stuff along with salt and red chilli powder and mix well.
Then spread lil butter / ghee on the outer surface of the bread slices. Spread the curry between the slices and toast well.
Keep checking in between so that it does not get burnt.
Serve hot with sauce of your choice.
