Tried out few varieties of Vegetable Biryani recipes …but I found Sara’s recipe to be matching my taste. Kudos to Saras for posting such a delicious biryani recipe.

Cooking Time : 25 to 35 min

Ingredients:
1. Basmati Rice – 3 cups
2. Water – 5 cups
3. Oinon, sliced – 1 big
4. Carrot, chopped – 1 .
5. Beans , chopped- 6
6. Brocolli – few florets
7. Cauliflower- few florets
8. Paneer cubes – few pieces
9. Green Peas – handfull
10. Spices :
cloves/lavang -2
cinammon/dalchini – 2
bay leaf- 1
cardamom/Elaichi -2
11. Mint leaves / Pudina – handfull
12. Oil – 2 ttblsp
13. Butter/ghee – 1/2 tblsp(Optional, but adding this would give a lovely aroma n taste)
14. Curds – 1 tblsp
15. Rose water – 1/2 tsp
16. Salt – as required
17.Red chilli powder – 1/2 tsp
18. Red colour – a pinch
19.Garam Masala – 1/2 tsp
20. Turmeric – 1/4 tsp
21. Kasoori Methi – 1/2 tsp
Method:
Firstly, wash and soak the basmati rice in 5 cups of water.
Meanwhile, cut all the vegetables into small medium pieces and put them in water.
Heat a pressure cooker, add oil / ghee . To this, add the spices ( cloves,cinnamon,bay leaf , cardamom), sliced onion and fry them till golden brown.
Add pudina leaves and sauté them for some time.
Add the chopped vegetables and sauté them. Add paneer and sauté.
To the sautéed stuff , add red chill powder, turmeric,a pinch of red color gram masala and crushed kasoori methi . Mix well and sauté for few minutes.
Then add the soaked basmati rice . Sauté for some time ,add curd and water to it.
Add salt as required.
Close a lid and keep on medium flame.
This rice will be ready in 15mins. Keep checking in betwween.
If slightly the bottom rice is burnt then the taste is good. Turn off the flame and add rose water.Mix well and serve hot with raita or any curry of your choice.
